  • Transformation of cassava for the production of bread and pastry products

In the food sector, Benin greatly relies on foreign aid. This reliance has accentuated the consumption of non traditional products, in particular bread and by-products of wheat. During meetings with the people, in particular with the women involved in the bread-making process, the problem was tackled. The transformation of cassava, which can be used also in the production of bread ( about 40%) seems to be one of the possible solutions, both in order to limit the local importations, and to create or implement income generating activities. The districts of Borgou and Albori are in fact areas in which great quantities of cassava are produced and the market would be capable of absorbing this production.
